Tall Man told me to remind it who the Big Bird is. So, I tried to channel my inner Big Bird and let the white chicken know that I was boss. Hasn't worked yet.

The said escapee bird has been guided back home on numerous occasions by our neighbors. I apologize. Each time they bring it back I think..."Why yes, thank you! So happy to have this bird back." Said in a self convincing voice. Honestly, the neighbors have been very nice to help us out.

However, the oddest behavior by far: Why does this chicken knock on the front door? This afternoon we were sitting in the front room and I heard a weird noise at the front door. Looked over at Tall Man and said, "That's a weird sound. Probably the escapee chicken knocking at the door. (insert hilarious, no way, type of laughter)" After a minute my curiosity got the best of me and I opened the door. Do you know how odd it is to open the door to find a chicken standing on your front porch? It's slightly twilight zone-ish. I look at it and think...."Yes, Do you have something to tell me?" I'm seriously waiting for it to talk one day and tell me he can get me a better deal on my cable.

So, finally an egg shows up and she stops pacing the coop, running away, and chasing us.....that is until she's ready to lay another egg. Seriously? Is this going to happen every time this bird lays an egg?

Help me!

The white one is the one from our chicken. You can't tell, but it's about 1/2 the size of the brown one from the store.

Can you stand one more chicken post?

I'm sorry...one more. I promise, well, no I don't promise that it will be the last because this is honestly one of the weirdest things I have done....stick chickens in my back yard. All for the lure of organic, free range eggs.

Things I have learned.....

1. If you don't put the ladder down on the coop so they can go up to roost at night before it's dark....well, chickens are blind. They will find the highest place possible to roost and that includes the top of our coop. Found them this way a couple of times before I clued in to get the ladder down. I don't like touching them! And I hate chicken feet!! So what happens? I grab a chicken and it wraps its feet around my finger. I proceeded to run around the yard screaming, well, like a chicken.

2. Chickens are basically stupid. Case in point...the white one just flew into the glass door.

3. Chickens know how to knock, or scratch. After listening to an odd scratching at the front door, and the cat beginning to pace inside, Zoo boy opened the door to find the white chicken, who was apparently letting us know that she was in the wrong part of the yard and needed help getting back. I know this may appear to contradict number two, but I still think they're stupid.

4. I think we have an OCD chicken. The white one. She is WEIRD!! Since getting rid of the rooster our little flock of chickens seem confused and weirded out; displaying bizarre behavior, like constantly trying to escape. Either that, or they have decided they don't like us and want a new home.

5. They love sprouted wheat and I feel good about feeding it to them. Makes me feel like a good urban farmer. Good advice from my sister-in-law.

6. I'm starting to panic about our portable coop. What is my yard going to look like in the winter when it's covered with snow, and chicken poop? I don't want to know, I don't want to know. Denial works for me.

7. Chickens are very clicky and critical of newcomers. They still don't like the new chicken and it's been two weeks. I would so totally be looking for new friends if I were her. Notice, she wasn't welcome on the top of the roost. Such rude girls.

Wish they would lay some eggs. I guess fact number 7, egg laying maturity seems to take FORRR-EVERRRRR!

This....is NOT a Rooster!

However, I have discovered something about the fowl world. Pecking order is a very real thing and so far we are failing miserably at introducing this little lady to the flock of three ninja's we have left. Holy cow they are mean! I guess that should actually be "Holy Chicken they are mean!" It stirs up all sorts of teenage angst in me as I watch them reject our new little chicken. She just wants to be friends? Come on ladies!! How could you be so cruel? Bullying is just not tolerated and can lead to all sorts of behavior issues. I don't think I can even call them ladies anymore. More like MMA chickens ready to bully anyone out of the ring, or coop in our case. New chicken, or as the kids named her Henrietta, (Seriously??) spends most of her day alone, and I feel sad for her. I am a horrible urban farmer. Human emotions and poultry shouldn't mix!

Hopefully Henrietta doesn't decide to go after the MMA girls with Pumped Up Kicks! (Side note plug...if you haven't checked out the band Foster the People, do it. Love them!) Actually, I would like her to just go after them, just once or even twice. Come on girlfriend....GET YOUR GAME ON!!

BTW....
Rooster boy is gone and happy. He spent a large portion of the day traveling with Tall Man in this box to his final destination. Honestly, I don't know which is worse; bullied chicken, or rooster boy in my yard?? Someone remind me why I did this?

Houston...We have a ROOSTER!

In keeping with the urban farming theme I have had going on this blog, my post today is a lesson in what a rooster looks like. This.....is a rooster.

The debate has been going on in the family for the past two months. Tall Man is waiting for it to jump on the fence post and start crowing before he believes it's a rooster. I'm not waiting for that morning wake up alarm. Here's why...

1. He's about twice as big as the other birds.

2. He's mean to the other birds.

3. He chest bumps and chases the other birds around the yard.

4.  He chases the cat.

5. He has long lovely tail feathers, which are there for a reason....to impress the ladies.

6.  He's mean.

7. His neck feathers fan out in the most funky way, that I honestly feel like I am watching Jurassic Park. Very fun to watch the gang of chickens wander the yard, but I don't think the cat enjoys it much. I think my favorite part is herding them in at night. I feel like a pied piper of chickens. Wonder what they would think if I came out with my bagpipes next time I put them in at night? Um....what are we doing?? Moment of realization we don't have a clue what we are doing. Thankfully, we know people who do. Learn as you go, I say. There's nothing more motivating in learning than the NEED to know. So, we now have four lovely chickens who are growing from one box to the next and living in my house. Yes, I have chickens living in my house. I'm sorry, but I really think this is weird! I remember when my dad would pick up fertilizer for the garden and it stunk. And that fertilizer came from the back end of a chicken. I have invited that into my home. Someone check and see if I have a pulse.

Four people in the house, four chickens in the house. So, we all named one. One brown one is named Kip (chicken in dutch). The other brown one is Pollo (chicken in spanish). The black one is Petit Oiseau (little bird in french) and the white one is Colonel (No translation necessary unless you've never eaten at KFC). We have some very creative people in our house.

Funniest moment so far....

My daughter, after hearing the chickens cheeping like crazy, went quickly in to check on them. It became obvious what their terror was all about. She found our 18 pound cat sitting by the box, peering over the edge. I would be scared. That cat is a beast with VERY long teeth. That had to have been a King Kong movie moment for chickens.

I have one complaint, other than the smell......chicken feet. They honestly, totally creep me out. I don't know why. But when I go in to check on them, I have to consciously tell myself, 'Don't look at their feet! DON'T LOOK AT THEIR FEET!' And then, I do because ......I don't know why I do! But my stomach rolls I get nauseated and have to leave. It's like being told as a kid not to look into the sun because it will burn your eyes and so you do, because burning eyes sounds irrational. Creeped out by chicken feet sounds irrational. Call me irrational.

Bursitis....it hurts!

Iliopsoas Bursitis, believe me when I say, you don't ever want to suffer from this ailment. I have learned over the past week that bursitis hurts and even read in one article that it is more common when you get older. Thanks....really needed that info. Very helpful.

I tend to workout like a crazy lady. 2 hours in the gym is not uncommon for me. It is my escape, my stress reliever and where I go to regain my sanity. Last Tuesday, I finally had a day where I could spend as much time in the gym as I wanted. No deadline to run out to, just finish to exhaustion and then go home. Yes Karen, forget about the fall you took last week and how your hip hurt after. By all means, just pump it out at the gym. Really, don't congratulate me here, it was actually really stupid.

I haven't been able to be as consistent with my workouts. But, that didn't stop me from believing, "Hey, no problem. I've got this workout in the bag!" Well, the next day, I realized that bag I thought I had was way overloaded and my body was about to let me know that I big time over did it. I took a step in the afternoon, "Ouch!" What was that?" A little later, another step...."Ouch! Okay, what is going on here?" Stepped out of the car later in the afternoon..."OUCH! I can hardly put weight on my leg!" Then, I proceeded to ice, stretch and try and convince, pop, stretch or destroy my body into believing that it was fine. I really should know better, but I am totally incapable of being objective when diagnosing my own body. I tell myself...."You HAVE to get to band practice, the concert is next Saturday and if you miss it, that would be BAAAD!!" Let's just say, when I got into the parking lot and tried to get out of the car, I nearly fell on the pavement. "OUCH!!! OUCH!! OUCH!!....." It went on like that for about five minutes until I finally gathered enough courage to step on my foot and get into the auditorium. I lasted about an hour standing, before I ended up laying on the floor. My concert participation is now toast!

So, visit to the PT confirmed....iliopsoas bursitis. Old people ailment. Icing all week, on crutches, not fun. Please take my advice....don't overdo it in the gym if you haven't been going consistently. Ease back into it (insert weekend warrior joke here), stretch lightly after your workout, and if your hip kind of hurts because you fell and strained it the week before, don't power through it. You might actually need some rest, ice and ibuprofen. (Karen? Are you listening? Yes, you! I'm talking to you!) Or, you might end up like me, watching your band perform instead of being in it....(insert sad violin music here). Anyone know where the balloons are? It's time for a Karen pity party, and I'm going all out this time!! Chocolate will be consumed.

Here's a little diagram in case you are curious what this little "bursa" thing is that can cause an idiot like me so much pain! Be scared, be very very very scared of annoying the bursa.

<div class="separator" style="clear: both; But, with the threat of on oncoming freeze and storm we decided to build a makeshift box to encourage the growth of this wonderful plant. Did I mention makeshift, or should I have said, "what is there in the garage we could throw up around one of the garden boxes with something that is still growing in it?". Seriously, it's sturdy, other than the plastic, which isn't very sturdy. A bit of plywood, plastic and voila...a nice place for swiss chard to keep growing. Was this a honey do kind of thing? Not really. It was more of a hey...spur of the moment....let's build a box....okay...have anything in the garage....plywood.....look plastic......go for it. If there's one thing we are good at as a couple....we don't plan...we just do. Sometimes it works, sometimes it doesn't, but it keeps it interesting.
<img style="float:left; margin:0 10px 10px 0;cursor:pointer; cursor:hand;width: 266px; height: 320px;" src="http://3.bp.blogspot.com/_J4drZIHbAbU/Sv2nLnoZWjI/AAAAAAAAAG4/g3MY6udQMVY/s320/IMG_1289.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5403658945973279282" />
This is my happy swiss chard in the box.

I admit...the chard in other unprotected boxes in our garden is still growing. Steam it, bit of Braggs vinegar and really..honestly, I'm not kidding, it's good! Seriously! Come on...try it. I have some if you need it! Really, I still have lots. Snow on Monday and Tuesday, snow today and it's cold. Yes, that weather change I was so hoping for is here and I'm sitting here with a bag of frozen peas on my back. That's right, frozen peas..... on my back. No, I don't plan to eat them anytime soon. If you ever have an owie and it needs a bit of ice, may I suggest the frozen bag of peas. Very user friendly. Just pop it in and out of the freezer as you need it. The peas are better than big chunks of ice. No ice to mess with, no water that leaks all over your clothes and it comes with its very own leak proof bag. Very effective. Cheap too because designer peas don't freeze your back, knee, elbow or whatever any better than the cheapest bag you can buy! I did Kenpo the other day from my P90x workout. Let's just say...I've needed some ice (or should I say peas) every now and then since. Next time you feel a bit of soreness, reach for a bag of peas. Maybe you'll even soak in some of the vitamins and nutrients of the peas by osmosis!

It's been a week....

<img style="float:left; margin:0 10px 10px 0;cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://4.bp.blogspot.com/_J4drZIHbAbU/St9lkyeXZ5I/AAAAAAAAAFc/lUFgBVQDUsI/s320/IMG_6933.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5395142561311975314" />
We'll just leave it at that. I guess I'm not a great blogger if I make promises that I don't keep. Before I post this recipe...I have one question. What is it about sauteing an onion? Maybe it's because it It smells like Thanksgiving. But my family always seems to walk in just as the onion has become fragrant and asks..."Yum. What's for dinner? It smells so good." At which point, I try to kindly reply..."An onion". Maybe there's already garlic sauteing in the pan too, so I might say...."An onion and some garlic. Hope you like it."

This recipe is a cornucopia of smells, which translates to flavor. I loved it, and my kids loved it as well.

Pureed Butter Nut Squash Soup
Modified from a recipe by Martha Stewart in Everyday Food (modified because I never seem to follow a recipe exactly)

First thing....peeling the squash. You can buy bags of squash where someone else has nearly cut their fingers off so that you don't have to risk it. I would recommend that, except I grew my own. So, I peel my own squash too.
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 213px;" src="http://4.bp.blogspot.com/_J4drZIHbAbU/St9cR-MDGGI/AAAAAAAAAEc/U9vmFZ7S_GU/s320/IMG_6911_2.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5395132342434207842" />

Soon after all the mess, there was a pile of 1 inch cubes of lovely butternut on my board, and I still had all my fingers, on my hand. Took some time, but I was pleased with the outcome. The cookie dough scoop really worked well to get the seeds out as well. Peeling....well, hope you have a good vegetable peeler. I even searched to find the expert way and they all said, grab a vegetable peeler and go for it.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 213px;" src="http://2.bp.blogspot.com/_J4drZIHbAbU/St9dozidRuI/AAAAAAAAAEk/UbFx-5E5sHk/s320/IMG_6913_2.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5395133834224027362" />

Ginger and Garlic....ahh! Can you smell it? Don't be scared of ginger, the funny looking root. It is full of wonderful goodness. Actually very good for digestion. So...use it liberally. The recipe called for a 2 inch piece. I wondered..'is that two inches square? 2 inches high? 2 inches round?" I don't know, but I think I used quite a bit and it was very tasty. I actually used one more piece than is in this picture. I warned you. I like ginger, and garlic, so I used 3 cloves. They were small.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 213px;" src="http://1.bp.blogspot.com/_J4drZIHbAbU/St9fb9-kJkI/AAAAAAAAAEs/1YFdy7pT3YQ/s320/IMG_6919_2.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5395135812711228994" />

Saute it all in a pot and enjoy the smell. Be prepared for the question. "What smells so good?"

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 213px;" src="http://4.bp.blogspot.com/_J4drZIHbAbU/St9geCLuimI/AAAAAAAAAE0/YgijP_JZhBI/s320/IMG_6922_2.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5395136947711543906" />

I added 2 cups of chicken broth and 2 cups of water, instead of all water. Thought the flavor would be nice. But, if you'd like to keep it vegan, than leave out the broth and use all water and use all olive oil, instead of butter. The squash cooked up beautifully and soon I was ready to grab the wand. Honestly, I was seriously looking forward to this part. It may have been the entire reason I made this soup!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 202px;" src="http://4.bp.blogspot.com/_J4drZIHbAbU/St9hslT8thI/AAAAAAAAAE8/NDnH0LoVqxQ/s320/IMG_6928_2.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5395138297171064338" />

I love the steam on the wand in the last picture. I love the wand blender in serious action. I love the color as it blends to a beautiful puree. I really love that I didn't have to dump all that hot soup into a blender.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://1.bp.blogspot.com/_J4drZIHbAbU/St9iaj39pOI/AAAAAAAAAFE/UBpPmm6Nm9U/s320/IMG_6931.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5395139087059231970" />

The pumpkin seed accompaniment to this dish is a must. Don't skip them. Do make more than you think you'll use. Even double the seed amount. I snacked on them for a week. So TASTY!!! I used more chili powder and added some cumin.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://4.bp.blogspot.com/_J4drZIHbAbU/St9kKxZ_6VI/AAAAAAAAAFM/wrfFJUoDpPQ/s320/IMG_6927.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5395141014836996434" />

The end result...very tasty. Topped with a dollop of greek yogurt, or goats milk yogurt. The tangy flavor of the goats milk yogurt truly enhanced the flavors. Sprinkle those tasty pumpkin seeds and garnish with cilantro. This is a soup that warms the soul and truly feeds and nourishes the body!! ENJOY!!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://4.bp.blogspot.com/_J4drZIHbAbU/St9kLb0VlFI/AAAAAAAAAFU/WHoUuLQSt78/s320/IMG_6933.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5395141026221757522" />

Pureed Butternut Squash Soup
Original recipe was Martha Stewarts from Everday Food. I've included my modifications.

1 tablespoon olive oil
1 tablespoon butter
1 piece (2 1/2 inches) peeled fresh ginger, chopped
3 garlic cloves, chopped
2 3/4 pounds small butternut squash, peeled, seeds removed, and flesh cut into 1 inch chunks.
1/8 cup fresh orange juice
Salt and Pepper
Greek Style or Goats Milk Yogurt
Spicy Pumpkin Seeds
Cilantro for garnish (optional)

Melt butter and oil in large saucepan over medium heat. Cook onion until fragrant, about 2 minutes. Add the ginger, garlic, and squash; cook, stirring occasionally, until fragrant, 6 to 8 minutes. Stir in 2 cups of water and 2 cups of chicken broth. Bring to boil and then reduce heat to simmer until the squash is tender, about 20 minutes.

Puree the soup with a wand mixer. Stir in orange juice and season with salt and pepper. Serve hot with yogurt, pumpkin seeds and cilantro.

Spicy Pumpkin Seeds
1 cup raw green pumpkin seeds
1 1/2 teaspoons chili powder
1/2 teaspoon cumin
1/8 to 1/4 teaspoon cayenne pepper
1/2 teaspoon coarse salt
2 teaspoons fresh lime juice.

Preheat oven to 350 degrees F. In a medium bowl, combine all the ingredients and toss to coat. Spread on a rimmed baking sheet; bake until puffed and browned, about 10 minutes.

Next time....I share the hottest, most inedible dish I have ever made. Just for fun!

Behemoths

<img style="float:right; margin:0 0 10px 10px;cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://4.bp.blogspot.com/_J4drZIHbAbU/StNrivrMRYI/AAAAAAAAAD8/Yi6vh3qrP9U/s320/IMG_6842.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5391771423549965698" />
There are many large things in my life right now. I started this post thinking about my cat, who is so large, he doesn't fit on my lap. I think I'll go measure him. From nose to tail...he's 42 inches long. That means standing on his back feet stretched out, he's over 3 1/2 feet tall. He's also 15 1/2 inches tall standing on all fours, from the tip of his ear to his foot. He's heavy too....17 pounds of cat. Yes, call me crazy cat lady, because I LOVE cats. My friends tease me that I'm going to be one of those old ladies with a house full of cats. Nah...I hate cat hair, so I think I'll stick with one. However, I honestly believe, that if there are such things as previous lives, I must have been a cat. My husband...(who also has a corner market on behemoth in the tall sense) thinks it's weird that I know what my cat wants by his meows. During the day...my cat is my best friend and reminds me to take a break now and then and lie in the sun. He follows me everywhere around the house, except when I practice my bagpipes, which causes him to promptly head for the door as soon as he sees me holding my pipes. This picture of my cat was taken by my son.

<img style="float:left; margin:0 10px 10px 0;cursor:pointer; cursor:hand;width: 320px; height: 197px;" src="http://3.bp.blogspot.com/_J4drZIHbAbU/StNtpu0fqPI/AAAAAAAAAEM/q0QQuVNMi6E/s320/IMG_6863_2.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5391773742602889458" /> Other behemoths in my life...butternut squash and swiss chard. Wow...swiss chard is an amazing plant!! It produces, forever!! Even cut back to a stump...after the first frost, little leaves were still coming up. Wow...it must be on the list of wonder plants. We've had a garden full of chard, all summer. Litteraly, I think we managed to plant some in every box. I wouldn't recommend that, unless you really like chard!! Or you know someone else that does, or you are running a co-op and selling it at a farmers market. Beautiful chard, is so good for you too. Leafy greens! It's like a super-pill plant for the body. Full of vitamins and minerals, I imagine my body just soaking up all that goodness the minute I put it in my mouth.

<img style="float:left; margin:0 10px 10px 0;cursor:pointer; cursor:hand;width: 214px; height: 320px;" src="http://1.bp.blogspot.com/_J4drZIHbAbU/StNvM9PkoxI/AAAAAAAAAEU/_96gBZgAvR8/s320/IMG_6856.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5391775447281607442" />I also love butternut squash soup. I grew butternut and bought a hand mixer, aka..Smart Stick, so I can make pureed soups. Julia Child would tell you to use a vegetable mill because...and I quote "Blenders and processors chop up and serve forth tough woody vegetable bits, while a vegetable mill holds them back to give you a fiber-free brew." Well...I like my fiber, but if you want an extra creamy purred soup, by all means, mill away! Martha Stewart...uses a blender. I'm going to use the Smart Stick tonight, because butternut squash soup is what is for dinner. The recipe I'm using from Everday Food by Martha Stewart calls for ginger, garlic and a bit of orange juice to add to the flavor. I will post the recipe tomorrow.

Here's the thing.....

Why I blog....
<img style="float:right; margin:0 0 10px 10px;cursor:pointer; cursor:hand;width: 320px; height: 213px;" src="http://4.bp.blogspot.com/_J4drZIHbAbU/Ss9cRX9hw9I/AAAAAAAAADM/aCIsf3cwqig/s320/IMG_4024_2.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5390628732545385426" />
Why blog?? I asked this question at the beginning, because it was the thought most completely on my mind. The internet is full of information, advice, ideas, recipes, stories, remedies, etc., etc., etc. So....why blog? There is no shortage of curiosity in my brain, and I fully admit to being an earnest seeker of information. Thus...the internet is a fanciful tool in the hands of such a person. Thing is....everyone else's information always seems so much more interesting. So, what do I have to say that might be interesting? Maybe nothing; but there is this one thing. I've discovered this is why I blog.......because I can. See, this country represents freedoms and last I checked, freedom of speech was still one of them. Certainly, sharing recipes, photography, ideas, amusements and epiphanies with the world isn't exactly marching on Capital Hill. Or is it?

If I could decorate my house anyway I wanted, it would look like fall. Minus the spiders. Really not a big fan of those creatures. Those little beady eyes and creepy looking legs. I'm not sure whether to celebrate or drop to my knees when I see my cat eat one. I'd love to ask him if those little spiders just wiggle all the way down. However, this bench in the beautiful canyon...there are no spiders. Don't even worry about looking under the table or the seats. The area has been determined to be completely clear of arachnids. I've picked us a nice spot. So grab a spot on the bench. Enjoy a warm cup of something and let's chat.....because we can.

My kids love this....

<img style="float:left; margin:0 10px 10px 0;cursor:pointer; cursor:hand;width: 320px; height: 240px;" src="http://1.bp.blogspot.com/_J4drZIHbAbU/SspqDgsm8II/AAAAAAAAAC4/8mw3HUWDB_Y/s320/IMG_1239.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5389236512651407490" />
So the days are cooling off, rather quickly. Yeah! I could have handled a slower drop in temperature. 40 degree drop in two days...wow. Yep, it's Fall. So, strike up the stove, heat up the oven. It's time to cook warm, comforting, good for the soul food. It can be good for you too! My kids love the Thai flavors in this recipe. I love that it cooks in one pot. Hope you enjoy it!

Spicy Coconut Chicken Casserole

Description
You’ll find Thai red curry paste (which keeps indefinitely in the refrigerator) and coconut milk in the Asian-foods aisle. For a spicier dish, stir in a bit more curry paste. Courtesy of Martha Stewart and the Everyday Food Magazine....love it!!

Ingredients
1 TBSP olive oil
4 whole chicken legs (about 3 pounds total)
coarse salt and ground pepper
1 can (14.5 ounces) light coconut milk
1 1/2 cups canned reduced sodium chicken broth
1 to 2 teaspoons Thai red curry paste
1 cup jasmine rice
8 ounces green beans (stem ends removed), cut into 1-inch lengths
2 red bell peppers (ribs and seeds removed), cut into 1-inch lengths
1/2 lemon, cut into wedges for serving

Directions
1. In a 5-quart Dutch oven or heavy pot, heat oil over medium-high. Season chicken with salt and pepper. Working in two batches, cook chicken until browned, 6 to 8 minutes; transfer to a plate (chicken will cook more in step 2).

2. To pot, add coconut milk, broth, 1/2 cup water, and curry paste; bring to a boil, and stir in rice. Add chicken (with any juices) arranging pieces in a single layer. cover and reduce heat to medium-low. Cook, without stirring, until rice is almost tender, 15 minutes.

3. Scatter bell peppers and green beans on top of chicken mixture; cover, and cook until vegetables are crisp-tender, 8 to 10 minutes. Serve with lemon wedges on the side.

NOTES:
*I used skinless boneless chicken thighs and they worked very well.
*I omitted the peppers and used frozen beans that I had thawed and chopped. Because I don't like peppers.

Food for Failure

<img style="float:left; margin:0 10px 10px 0;cursor:pointer; cursor:hand;width: 320px; height: 240px;" src="http://2.bp.blogspot.com/_J4drZIHbAbU/Srp6KY8cA2I/AAAAAAAAACI/Eq-1ubMV-II/s320/IMG_1190.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5384750623388074850" />
Honestly.....I'm a self confessed recovering perfectionist. I'm not a fan of making mistakes, but I recently read something that inspired me. Thank You Julia Child. French cooking has always been fascinating to me and slightly intimidating. So, I recently, and very excitedly, purchased "Mastering the Art of French Cooking". After reading the forward this afternoon and looking at the over flowing bowl of bananas...I decided to make banana bread. Okay...true, banana bread is most obviously not french. But for some reason lately my kids, who normally devour bananas, haven't seemed to notice the fruit bowl and I'm sick of freezing them, (which I hate because they turn out watery) eating them too ripe (which I also despise) or throwing them away, (which is what happens most of the time). So...how did french cooking and fear of failure lead me to banana bread? Well... First of all, I didn't have all the ingredients, although I very rarely stick to a recipe completely anyway. But the big one is this whole 'share stuff on a blog' thing which is.... well.....daunting to a perfectionist, even a recovering one. So, not too dissimilar to getting on the plane when you are afraid of flying......I'm diving in, covered in flour, ready to report success or failure with my banana bread and because I'm bored during the day and I need something to do...why not blog, cook and blog some more?? So I start with this recipe for Banana bread, a bread that I must admit, I don't even really like. You know the story.....have a food you don't like because yada yada yada and then the story ends badly at this point. For me banana bread = college cafeteria, training table with the volleyball team...and let's just say...too much banana bread was consumed! :)

One other thing to thank Julia for....butter. This recipe does not use oil...it uses butter. I know Julia would like that! Also, Julia would want you to just cook, and forget the rest, especially failure. Art imitating life......... forget yourself and just cook!

So here's Emeril Legasse's recipe for banana bread from 2003 which I found on the FoodTV network recipe sight.....with a few variations.

Banana Bread

10 tablespoons plus 1 teaspoon butter

1 cup mashed ripe bananas (about 2 large bananas) ----I used three medium today and didn't measure because I don't like mashing bananas.

1/2 cup sour cream ----- I used full fat lovely Greek Plain Yogurt. I didn't have sour cream.

2 large eggs

1 1/2 teaspoons vanilla

2 cups cake flour ----- I used all purpose.

3/4 cups plus 2 tablespoons sugar ---- I rounded up to almost a cup. Seemed logical.

1 teaspoon baking soda

3/4 teaspoon powder

1/2 teaspoon salt

1 cup toasted, chopped walnuts ----I didn't toast them, because I didn't want to.

1 1/2 cups semi-sweet chocolate chips      ----They weren't in the original recipe...but I'm also a self                                                                           confessed choco-holic.

Preheat oven to 350 degrees F.

Lightly grease a loaf pan with that one little teaspoon of butter, (or more if you need it). It gives the dimensions of the pan, but just use what you have and watch it cook. A loaf pan is a loaf pan, isn't it?

Puree the bananas, sour cream (or yogurt), eggs and vanilla in a food processor.

Sift the cake flour (or regular flour), sugar, baking soda, baking powder and salt into the bowl of an electric mixer fixed with a whisk attachment. Add the remaining 10 tablespoons butter and mix on medium-low speed until blended about 30 seconds. (Mine needed a bit more power and speed) Add the banana mixture in 2 batches, scraping the sides of the bowl and mixing on medium speed between each addition. Fold in the nuts.

Pour in the loaf pan. Bake until lightly browned and bread bounces back to the touch, about 1 hour 10 minutes. Remove from the oven and cool for 10 minutes before turning out onto wire rack to cool completely.

So, the result.....Wow!! Even though it has a nice crunchy crust on the outside it is moist and chocolatey on the inside. The texture is a bit crumbly. While hot, it was quite crumbly. A wonderful flavor, not too greasy. Somehow, it is actually light and not like those denser type of stupid banana breads that you feel you could tile your floor with. I digress...too much description. This banana bread has a nice cake like texture, yet a bit more heavy than cake. My family loved it. For a sweeter version use milk chocolate chips. I wish I had used dark chocolate chips, like Ghiradelli 60% cocoa chips instead. Overall...I'd give it 4 measuring spoons out of five.

Food & Photography
Just a reminder....the leaves are changing. The hues of early red mixed with greens still yet to change are so beautiful.

I'm also craving soups, stews, and hearty fall dishes. I have a really simple request from said "mother nature"....please, some cooler weather??? I want to bake, braise, stew and roast food. Look for some great fall recipes to come.

The only reason for seasons are so that when it is too hot, you can look forward to fall, and when it is too cold, you can look forward to spring. I can see how a blog would have been a fun thing when I lived overseas for 7 years, it's a great way to keep in touch. So, in a world of facebook and instant everything....why blog?

I'm not sure I know the answer to that question. If I figure it out, I'll let you know. As a bit of water passes under the bridge of my life I've learned one thing...I have a lot to learn! So, with a bit of food, family, philosophy, photography and travel and sport thrown in, maybe something will be interesting along the way. If there's one thing I'm passionate about.....it's life! The joy of each day comes from one place and one place alone......me! Not in a "the world revolves around me kind of way", it's just that the true source of joy in our lives comes from within, not without. The name of my blog..... well that's a long story, but ties into the whole "joy" thing and hopefully one that will make sense, someday!

See...I learned something new just yesterday. That little button at the bottom of the blog screen that says..."SAVE NOW", it means it. You never know when your first blog might be erased completely by a passing thunder storm and a power surge. I was asking myself, after the screen went black, "Why am I blogging?".
